Spice Cookies Two Ways
Oh man I love fall flavors, I love how warm they are, that they make me want to cuddle on the couch with a cup of coffee. Cuddling with my husband, and now my baby makes me so happy!! I made cookies this weekend for choir practice, but I wanted to give people a few options without going through too much extra work: enter spice cookies two ways:
Pumpkin Spice Cookies with Cinnamon Cream Cheese Frosting
Apple Spice Cookies with Browned Butter Frosting
These cookies are very delicious, light and fluffy without being too dry and cake like. Matt liked them better without the frosting because he said it took away from the cookie flavor too much, so I think next time I make them I will just drizzle the frosting on.
Let's get started!
Beat the butter and sugars until light and fluffy, add the eggs one at a time and beat after each addition.
In a separate bowl whisk together the dry ingredients. Beat the molasses into the butter and egg mixture, add the flour and beat until combined.
For the next step, you can either divide the batter into two bowls, or make only one flavor of cookie.
Add the pumpkin to the batter and beat until combined.
For the apple cookie, peal the apples and grate them on the large holes of your grater, squeeze the excess juice out. Beat the apple into the second bowl of batter.
Either grease your cookie sheets, or line with parchment or wax paper. Scoop the dough onto the pan and bake for 8-10 minutes at 350 degrees.
For the cream cheese frosting beat the cream cheese and vanilla, slowly add the powdered sugar and beat until smooth, add the cinnamon and stir to combine. Spread on the cooled Pumpkin Spice Cookies.
For the browned butter frosting melt the butter over medium heat and allow it to brown a bit, but do not let it burn. Beat the butter, powdered sugar and vanilla together, add the milk until it's a spreadable consistency. Spread on the cooled Apple Spice Cookies.

Spice Cookies Two Ways
Cookies:
1 1/2 cup unsalted butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
4 1/2 cups flour
1 Tablespoon baking soda
1 Tablespoon cinnamon
1 teaspoon ginger
1 teaspoon cloves
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup molasses
1 teaspoon vanilla extract
3/4 cup pumpkin puree (1 1/2 cup for the whole recipe)
1 cup grated apple, about 1 medium apple (2 cups for the whole recipe)
Cream Cheese Frosting:
4 ounces cream cheese, softened
1 teaspoon vanilla extract
2 cups powdered sugar, sifted
1 teaspoon cinnamon
Browned Butter Frosting:
2 Tablespoons butter
1/8 cup milk
1 teaspoon vanilla extract
2 cups powdered sugar, sifted
1. Preheat your oven to 350 degrees, prepare your cookie sheets by greasing them or placing parchment paper or waxed paper on the sheets, set aside. In the bowl of your mixer, cream together the butter and sugars until light and fluffy, add the eggs one at a time, beating after each addition.
2. In a separate bowl whisk together the dry ingredients and add it to the butter and sugar mixture and beat to combine, add the molasses and vanilla and mix until just combined. Separate the dough into two bowls, unless you are just doing one flavor.
3. Grate the apple into a bowl or plate and squeeze out the excess juice. Add the apple to one of the bowls and beat till combined. Add the pumpkin puree to the other bowl and beat until just combined. Spoon onto the cookie sheets and bake at 350 degrees for 8-10 minutes or until light golden. Allow to cool completely.
4. For the cream cheese frosting beat the cream cheese and vanilla together, slowly add the powdered sugar and beat until fluffy. Add the cinnamon and mix it together. Spread on the cooled pumpkin spice cookies.
5. For the browned butter frosting, melt the butter over medium heat until browned, take off the heat and add to the powdered sugar and vanilla. Add enough milk until it's a spreadable consistency, spread on the cooled apple spice cookies.
