Recipe: Oatmeal Cinnamon Chip Cookies

A while back a friend asked me to make some muffins for her husband, she wanted super yummy cinnamon muffins.  I went online and looked at recipes, and the one I decided on called for cinnamon chips, but I couldn't find them anywhere.  Last week I was at Winco and I was looking in their Holiday Baking aisle that was set up when I spotted them...Hershey's Cinnamon Chips, so I snagged a few bags.  I wasn't i the mood for muffins, but I really wanted to try them out so I decided to make some oatmeal cookies with them, and oh boy, they do not disappoint.  I love my oatmeal cookie recipe, and I don't usually put raisins in it, I think the oatmeal by itself is just too delightful!  I hope you enjoy it as much as I do!!

Start by creaming the butter and sugars together in a mixing bowl until light and fluffy, about 5 minutes.  Add the eggs, one at a time, beating after each addition, add the vanilla.

Next add the flour, baking soda, cinnamon and salt and beat to fully combine, scrape down the sides of the bowl and add the oatmeal, mix well.

Add the cinnamon chips and mix until just combined.  Spoon onto a baking sheet and bake at 350 for 13 minutes.  Allow to cool before enjoying!


Oatmeal Cinnamon Chip Cookies
makes about 4 dozen

Ingredients:
1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 Tbsp vanilla
1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups oats

Instructions:

1.  Preheat oven to 350, prepare 2 baking sheets with parchment or waxed paper.

2.  Beat together the butter and sugars until light and fluffy, about 5 minutes.  Add the eggs one at a time, beating after each addition, add the vanilla.

3.  Add the flour, baking soda, cinnamon and salt and beat well, scrape down the sides of the bowl.  Mix in the oats and cinnamon chips and beat just until combined.  

5.  Drop by rounded spoonfuls, or by using a cookie scoop, onto your prepared cookie sheets, bake for 11-13 minutes, or until golden brown, cool completely.

  3. I made these cookies last week and I absolutely loved them and so did my 17 month old son!!! I looked on-line for a recipe and happened upon yours and I am so glad! I am making some more today to send in a Christmas care package!!
