So, because of the article in The Times and the photo on the front, I've quickly reevaluated breast feeding.  I have truly loved being able to breast feed our daughter, what a blessing it has been for both of us.  The bonding is wonderful but not having to pay for formula, what a money saver, not only that but it was made perfectly for her!  We have definitely been blessed that it's gone so well!  I had been saying that I was going to go to 18 months and then wean her, but that photo just made me so uncomfortable that I can't do it anymore...I saw the photo and was so physically done with breast feeding.  Every family can do whatever they want, and whatever is best for them, so with that said, we are officially weaning from breast feeding.  It's going pretty well so far, and Matt's being super supportive of it!  He has never minded me breast feeding, but now that I'm weaning he's stepped up his game so much.  This week he's gotten up with Brooklynne both mornings and given her breakfast then put her back to bed so I can keep sleeping, he's the best!!  She hasn't been too fussy about not breast feeding, but we've given her another feeding of something before bed time, Sunday night was warm milk, and last night was oatmeal with apple sauce (she only ate half, though).  I'm quite swollen right now and it hurts very bad, but I hope that goes away soon, which it should.  I'm physically very excited to be done, but it's been harder emotionally than I thought it would be.  I don't let my emotions govern my parenting so I was pretty shocked that I've cried quite a few times about it.  I hope and pray that I'm able to breastfeed all our children, but I will never have it back with Brooklynne, and it's a hard thing to grasp and accept.  What a blessed mama I am to have had this much time with her, though. Thank you Lord for blessing us so much!

Menu Plan Monday (on Tuesday)

Well, here we are again, another week.  I'm pretty excited about this week because I get to go on a date with my husband, we haven't been on a date since February, I think, and Brooklynne came with we are LONG overdue!  We have gift cards for Fandango and a restaurant (one of my least favs, but it's a restaurant) so I'm hoping to use those for Friday night!  Anyways, here's what we're eating this week!

Everything looks so yummy, so I'm really excited about it.  I'm also very excited because I managed to keep our groceries under $50 this week, and I hope as I start to go cash I will have no problems doing that every week!

Also, I'm working on our family binder, I want to have a place for everything: our weekly calendar, to-do's, menu, emergency info, daily docket, and especially a spot where all our monthly bills go so they get paid on time, and recorded when they're paid.  I'm trying to get organized, it's just not a natural thing for me...I need someone to do it for me, but then I'd have no satisfaction in doing it myself.  The girl's napping, so I need to lay down for a bit before she wakes up!

Weekend Update and Mother's Day

Oh man, I truly look forward to the weekends more than I ever have before.  My weekends technically start on Thursday, but I'm exhausted all day Thursday, so Fridays are where it's at!!  Saturday morning I went to the gym and worked out with my amazing friend, Heather, and it was awesome, I've been sore all weekend!  We went to the park that afternoon and played for a little while, but it was so hot!

She took 3 half hour naps and woke up crying each time (they're usually at least 2 hours long), turns out she has 6 teeth coming in. 

Saturday evening we went to Yogurt Mill for dessert, it was delicious.

this is Matt's grandpa, and I love him very much.  I had three grandfathers, one died in 1995, another in 1997 and the last died in 2001, so I had been without a grandfather for a while.  I am so blessed to have a grandpa again and he's such a good one!!

My Mother's Day was so wonderful, Matt took care of Brooklynne the entire day, I didn't change a single diaper all day!  She didn't want me to hold her at all, and then last night she was suer cuddly with me when we got home from Fresno, and she's not normally a cuddly was definitely the perfect ending to our day!  What a blessed mama I am!!

I'm apparently not very good lately at taking pictures on my phone. My coworker dropped my phone back in January and broke the screen and ever since my phone has given me problems. Usually by the time my camera has loaded (takes a longgggg time) B stops doing what she's was doing. Anyway, that's why there are so few instagrams this week.

one of those days...

Working grave shifts are hard; working grave shifts and having a 14 month old are really hard.  I typically get off at 4:30 and go home, unless I go grocery shopping first.  I'll usually go online for a little while because I can't just go to bed as soon as I get home, I typically need to unwind for a bit.  I then take a shower (the thick starbucks smell is not good) and get in to bed, by then, it's usually 5:45 or 6.  Brooklynne wakes up around 7, I nurse her (yes, we're still nursing) and put her back in her crib and she usually will sleep till 8 or 8:30.  So most mornings I'm functioning on and hour of sleep, maybe 2, and it's very wearing on my body.  I try to get a nap in during the day, but if I nap, that typically means that I won't have time to get my house picked up, I also go to the gym every day, too (which has become a love of mine).  Brooklynne doesn't always see things the same way as I do, take today for example: she took a nap when we got home from the gym (it was 2 hours past nap time, so she was wiped) and slept for 2 hours.  When I went to put her down for her second nap (she was rubbing her eyes and mega grumpy), she laid right down, I left the room and a few minutes later she started crying.  I let her cry for 30 minutes but knew she wasn't going to go to sleep, so I got her up and she played for a good 2 hours.  She was then really grumpy and rubbing her eyes, so I put her down again, and she did the same thing.  So, she's in her crib right now, crying, but so exhausted.  It makes days where I worked the night before and where I have to work that night really hard.  Fall asleep baby girl!!

Anyways, today is my Friday for work, so hopefully tomorrow will be better and happier for both of us.  

Husband and I will be working on really our first ever budget tomorrow night for our Dave Ramsey class, and I'm actually really excited about it.  I'm excited about the idea of being debt free and paying cash for everything and being on the same page for our bills and money.  The past few months we've been a lot more open and honest with our communication when it comes to money, and I've loved it.  I can't wait till we are another success story for the Dave Ramsey system!!

Okay, time to go get my kid up...she's still crying.

Teriyaki Chicken Lettuce Wraps and Menu Plan Monday

Holy long blog title, Batman.  I told you last week that I would post the recipe for my lettuce wraps, and since I made them last night, I figured, why not just post them today.  So here they are, in all their super yummy glory!

Alright, let's get started.  
First start with your chicken, I typically use a chicken breast that I've chopped up real small, but I had chicken left over from our roasted chicken last week so I used that.

To the chicken add your teriyaki sauce and peanut butter.

Chop up the peanuts (unless you're using crunchy peanut butter) and mix it in to the chicken mixture.

Take your ramen and remove the seasoning packet, save that for a dry rub or to spice up a vinaigrette.  

Cook the noodles according to package directions, drain, rinse and set aside.

Cut your cucumber and carrots into strips (the thinner the better), set aside.

Take a sharp paring knife and cut off as many leaves as you will need, close to the root ball.  Wash and dry the leaves, I find a salad spinner works great for this (by the way, if you eat salad, you should have a salad spinner, they're like $2 at Walmart).

Take the lettuce leaf, layer with a scoop of the chicken mixture, some ramen noodles and top with the cucumber and carrots.  So simple, delicious and if you let the chicken cool, it's a perfect summer meal!! I served it with a side of quick fried rice that I made with leftover brown rice from last week, super simple!

Teriyaki Chicken Lettuce Wraps

2 cups shredded or diced chicken, cooked
1/4 cup teriyaki sauce
2 Tbsp peanut butter
1/8 cup peanuts, chopped (omit of using crunchy peanut butter)
1 package ramen noodles
1/2 english cucumber
1 carrot
1 head butter lettuce

1.  Heat the chicken in a pan and add the teriyaki sauce and peanut butter, stir until combined, add the peanuts.

2. Cook the ramen noodles according to package directions, but do not add seasoning packet.  Drain, rinse till cooled and set aside.

3.  Slice the cucumber (remove the seeds) and carrot in to long thin strips (julienne) and set aside.  Wash and dry the lettuce leaves.

4.  To assemble, top each lettuce leaf with a scoop of the chicken mixture, a few ramen noodles and the cucumber and it up!!

This recipe has approximately 3 Weight Watchers Plus Points per serving.

Also, I haven't decided yet, but I'm thinking about starting to plan my own breakfast and lunch so that my trainer knows that I will be eating my breakfast everyday (I love breakfast, but sometimes I don't eat it till late).  So, hopefully having it written down will help me to be more creative about my other meals...we'll see.  That would mean that Husband would have to make a new menu sheet for me, even though he just did one (still have yet to show you all).  What do you think?  Should I plan my b-fast and lunch too?

Our Weekend Update

We had our annual church family camp this weekend, here's last years post if you want to reminisce a bit. Anyways, B and I left around 4 on Friday afternoon with my mother and father in law, we stopped at Carpo's, which is one of their favorite places to eat, and got dinner. 
 We got to the KOA at around 8:10 and Matt and his brothers showed up around 8:30.  We got settled in to our lodge (yeah, we had a nice one this year) and put Brooklynne down for bed at around 9:45 (ugh).  We didn't stay up too much longer since she was in the loft so there wasn't much we could do with no lights on and trying to be quiet, but I was fine with going to sleep, I was pretty wiped out already.  
Saturday morning my father in law made super yummy smelling belgian waffles (I had oatmeal), but Brooklynne and Matt sure did enjoy them.
That afternoon Matt played ultimate frisbee with a bunch of the other guys while B, my brother in law, my in laws and I went antique shopping.  We stopped at a thrift store where I saw a very cute dress on the mannequin.  The dress was a small, and I don't fit in smalls, but I wanted to try it on just to see if it would be the right cut for me (clothes rarely fit right because of my STUPID body type) for when I lose more weight .  Anyway, it zipped right up ad fit perfectly!!!!  I mean, it will look better next week once I lose a few more pounds and will probably even be big on me once I'm at goal (but it looks cute belted)...but, I fit in to a small!!!!!

We had our traditional tri-tip for dinner that my father in law always cooks perfectly and oh my goodness, it was as amazing as ever (I saved up my points so I could have a bit extra), then we made s'mores that night.  
Sunday morning we had our church service, and it's always so wonderful to worship with fellow believers while outside, in God's creation, what a blessing!

Brooklynne did a good job sitting for a little while, but then Matt took her to the back of the field and held her (she was tired since it was right during nap time). 
We checked out at noon and headed to a park for lunch, Brooklynne loved the turkey wrap that I made for her and she was so cute eating it! 

We drove down to Capitola and hung out on the beach for a little while.

What a wonderful, but exhausting weekend!  Can't wait for next year!!
